Chicken & Orzo Bake


2 chicken breast
1 Tblspn olive oil
1 Tblspn butter
½ jar Mamia’s medium sauce
¾ cup orzo
1 diced onion
3 cloves minced garlic
½ diced capsicum
1 small zucchini
1 cup spinach leaves
½ punnet cherry tomatoes sliced in half
1.5 cups chicken stock
Handful fresh basil leaves


First preheat your oven to 180 degrees. Next season your chicken breast with salt and pepper and heat your oil in an oven proof pan. Once oil is hot sear your chicken on both sides until nice and golden, about 5-7 minutes. Once chicken is browned remove from the pan and set aside. In the same pan add your butter and once melted fry off your onion, garlic and capsicum for a few minutes until softened. Season with salt and pepper, and add your zucchini and orzo and toast the orzo for a few minutes making sure everything is mixed together well. Then add in your ½ jar of Mamia’s sauce, the chicken stock and spinach and stir through. Add your seared chicken breast back into the pan and your sliced cherry tomatoes and place into the oven for 15-20 minutes or until chicken is cooked through.

Sprinkle fresh basil leaves on top to serve.
