This baked whole snapper recipe is a really simple way to cook fish perfectly every time. With the addition of the flavourful green chilli sauce, few slices of aromatic lime and the job is done! Serve the fish with steamed jasmine rice or chips. It also goes surprisingly well with fried plantains.
Ingredients:
2-3 serves
One whole snapper (about 1 kg), cleaned, gutted and scaled
1 lime
2 Tbs Mamia’s green chilli sauce
cooking oil
salt
To serve:
Mamia’s green chilli sauce
lime wedges
fresh coriander leaves
Method:
Preheat the oven to 230C.
Put the fish on a parchment paper-lined baking sheet. Make 3 crosswise slashes down to the bone on each side of the fish. Rub with the green chilli sauce, season with salt and drizzle with oil. Stuff the cavity with the lime slices. Roast for about 20 minutes, until the flesh is opaque.
Serve the fish warm with a little bowl of green chilli sauce, fresh coriander leaves, and lime wedges. Enjoy!
